Ingredients
Huli Huli Chicken, 8 Ounces
Miso Soup Base, 1 Package (1.05 Ounces)
Water, 2 Cups
Mochi, 3-4 Blocks
Carrot, 4 Ounces
Mizuna, 4-6 Ounces
Directions

Ingredients

  • 8 ounces huli huli chicken, large diced
  • 1 package (1.05 ounces) miso soup base
  • 2 cups water
  • 3-4 pieces mochi block
  • 4 ounces carrots, large diced
  • 4-6 ounces mizuna (sub with spinach if not available)

 

Directions

  1. Preheat your broiler (or toaster oven to 500 degrees).
  2. Place the mochi cakes on a baking sheet and broil at 500 degrees for 2-4 minutes until they puff up and turn slightly brown. Keep an eye on them as they can burn quickly. (Chef Tip: Alternatively, you can grill or pan-fry the mochi until they're puffy and slightly crispy on the outside. I prefer to grill mochi because it adds a smokier flavor!)
  3. Large dice chicken. Save all the liquid in the container. Reserve.
  4. Peel and large dice your carrots.
  5. To make soup, follow the directions from the miso packet. Cook carrots in the miso soup until tender.
  6. In a serving bowl, place your diced chicken, mizuna, and mochi. Ladle over the hot miso soup with the carrots.
  7. Enjoy!
